Happy St David’s Day! To celebrate I made a delicious batch of Welsh cakes to have with a lovely cup of tea. To make it extra special I knitted a tea cosy and made a few crochet daffodils for the top!
Welsh Cakes
200grams self raising flour
200grams caster sugar
200grams Welsh butter
100grams currants
3 eggs beaten
oil for the griddle
Rub the flour and butter together in a bowl and then add the sugar and currants. Mix in the currants and the beaten egg to form a dough. Roll the dough out on a floured surface to quarter of inch thickness. Cut them into rounds. Oil a griddle or frying pan and place the welsh cakes in on a moderate heat cooking for about 3 minutes on each side. Enjoy warm with butter and jam!
